Karst Cave-Aged Cheese

Good Afternoon Cheesy1’s,

I have returned from my trip to Florida and I have succeeded in finding a cheese that was tasty and different in America, and It’s called Karst. It was quite expensive at $11.90 for 250g which works out at around £9.22! In America though it was worth it for a good piece of cheese. As it says in the pictures it’s a combination of Cheddar & Gruyere and that is achieved through the Helveticus starter culture which derives from sweet continental cheeses and can form a caramel sweetness in cheeses where it wouldn’t normally be found. As you may all know I love Wookey Hole Cheddar and was missing this and thought that this should be similar but it was actually fairly different, though sharing some attributes. For an exciting looking cheese it has very little information available to access but here is what I have managed to find out. It is made in Vermont USA where it is also matured in the Jasper Hills caves for 7 months, it is an artisan cheese and features a natural rind. This pasteurised cow’s milk cheese is firm with a sweet and nutty flavor. It was extremely delicious and the combination between the two worked really well, and a serving suggestion would be with a crisp apple cider or a lovely deep red wine. It would also make a lovely sauce or macaroni cheese. I’m so glad that I tried this and would love to have this more often in the UK but unfortunately it won’t be easy or cheap to get it here, but if you ever visit the USA then don’t be frightened to try it.
